33.3C. Hot hot hot! I’m NOT complaining, but I’m also not cooking any “proper food”. The kids thought this salad was the starter. No. This is it.
Fresh and cold.
Watermelon Salad – 1/2 medium sized water melon, cubed
– 1-2 cups of sweetcorn
– halloumi cheese, dairy or vegan
– handfull of fresh mint leaves
– 2 tablespoons chopped spring unions, the green bits
– olive oil
– salt
Fermentation is natures way of upgrading your ordinary eats to nutrition dense super foods!
We all know about the importance of a healthy gut and making sure we have a diverse array of gut microbes can help with a whole host of health concerns.
Everyone can make their own healthy bacteria at home, it’s so simple and cheap!
Now It’s bit colder (writing this from London town) it can take a little bit longer than in summer but this recipe should be ready in 10-14 days.
Just taste (with a wooden spoon) as you go along and don’t forget to burp your little baby once a day or once every other day.
Fermented Carrots with Turmeric
-4 carrots (about 400g)
– 2 fresh turmeric
– handful of dill
– 15g of sea salt for 1 litre of water
– plastic bag with brine to press down the carrots

Fermented Cabbage, Cauliflower and Dill
– 1 cabbage head
– 1/2 cauliflower head
– bunch of dill
– Himalayan crystal salt (15gram of salt per kilo vegetables)
I never get bored of this super healthy NUT FREE Vegan almost Raw (bar the quinoa) TACO BOWL.
If I was told I could only have this meal for the rest of my life I would not be sad at all!!
It’s full of taste, It’s clean and super easy do make, a requisite for me, as you might have noticed 🙂

This completely raw vegan creamy coleslaw is just so delicious, filled with crunchy healthy fennel, carrots and cabbage and mixed with a dreamy creamy raw vegan dressing made from cashew nuts and sunflower seeds. And for extra zing the lemon and fresh herb mix that makes this coleslaw extra special.
Have it on it’s own or with your summer BBQ.

Raw Vegan Coleslaw with Herbs
Ingredients:
– 1/2 fennel bulb
– 1/2 red cabbage
– 2 carrots
– 1 teaspoon salt
– 1 teaspoon fennel seeds
Herb mix:
– 1 tablespoon flat parsley
– 1 tablespoon dill
– zest from 1 lemon
– 1 spring onion
Dressing:
– 1 cup cashew nuts
– 1/2 cup sunflower seeds
– 2 tablespoons fresh lemon juice
– 1 1/2 tablespoons raw apple vinegar
– 1 teaspoon salt
– 1 garlic clove
– cayenne pepper to taste
– 1 and 1/3 Cup water

I made the above video yesterday and I had the pistachio and rocket pesto with butternut squash and pomegranate seeds on top., so delicious!
Today I can’t wait to have the rest of the pesto for lunch with freshly spiralled zucchini noodles. YUM!
Pistachios are a great source of copper, manganese and B-vitamins they also come with important protein and fibre.
Rocket salad really is a super nutritious leafy green, packed with calcium, vitamin A, vitamin C and vitamin K.

Fennel is defiantly the star ingredients in this salad.
Fennel is sweet and crispy and comes with gorgeous phytonutrients like rutin and quercitin.
I’m also using über healthy, raw beetroot packed with loads of lovely antioxidants, it comes with anti-inflammatory action and is great for helping the body detox itself.
All the ingredients needs to be really thinly sliced so a mandolin comes in handy.
So much quicker and safer for me as my knives skills are not completely up to scratch and I’m very often sporting a sticky plaster on my left thumb!
This salad is perfect as a starter for four people or have it all as a main 🙂
Raw Sweet and Crispy Beetroot and Fennel Salad Serves 4 starters or as 1-2 mains
Ingredients:
– 1 beetroot
– 1 carrot
– 1 fennel
– fresh coriander
– 4 walnuts
dressing:
– 1/4 cup olive oil
– 2 tablespoons raw apple cider vinegar
– 1 tablespoon tamari
– 1/2 tablespoon coconut nectar

After a very indulgent Easter weekend I’m really looking forward to chew on some proper rabbit food i.e. salads.
I’m prepping my Spicy Autumn Salad that you can find here for lunch (it works as well during spring) but I’m using the above Lime, Ginger and Tahini dressing.
It’s one of my favourite dressings and perfect when you need to jazz up your veg.
It goes with most salads and I sometimes make a double batch and bring with me to work where they have a good salad bar but the dressings are not that healthy.
This is my favourite salad at the moment!
So easy to toss together and the kids love it!
It’s quite benign, no spices or herbs just bog standard vegetables with a dressing that is sweet but also quite plain.
I use a hand held mandolin for the carrots, the kids love to eat those ribboni-shaped carrots, but you can also use a vegetable peeler.
