Gluten Free Polenta Bread

Happy Monday! I’ve got a really good Polenta Bread recipe for you. Perfect for November when it’s getting colder outside and you want to drink tea and have delicious slice of bread in front of the fire/tv.
This is one of the super simple recipes that I want my teenager to know by heart so he can whip up a gluten-free tasty loaf just like that!

POLENTA BREAD

-300 gram Polenta Flour

-115 gram chickpea Flour

-1 egg replacer

-1 Tablespoon vinegar

-4 tablespoons Maple Syrup

-6 Tablespoons Coconut Oil

-2 tablespoons Sun Flower Seeds

-1 tablespoons Chia Seeds

-2 teaspoons Sea Salt

-1 teaspoon Baking Powder

 

Recipe: No-Bake STAR BARS gluten and nut free


Happy Monday! I got a new recipe for you: The perfect no-bake STAR-BAR! Filled with top-notch nutrients and very popular as a snack in my house.

I keep them in the freezer on a plate and the kids just go and take one when they need a yummy pick-me-up.
They are star shaped to make them look like cookies and also I love stars 🙂 Have them with a cup of warming liquorice or cinnamon tea and they will keep you full and satisfied for a long time.
I bring one with me when I pick up my hungry boy from school or pop one in his school bag if he has an after-school club.

Makes 12 STAR-BARS
– 1 1/2 cup oats
– 10 apricots
– 5 majool dates
– 2 tablespoons dried mango
– 1 tablespoon pumpkin seeds
– 1 tablespoon hemp seeds
– 1 tablespoon sprouted flax seeds
– 1 tablespoon chia seeds
– 1/2 tablespoon maca powder
– 1 teaspoon cinnamon
– 1/4 teaspoon turmeric

Direction:
Chop up the dried fruit. Put everything in the food processor and mix until a ball is formed. This takes a few minutes.
Flatten the dough so it’s about 0.5 centimeter thick, then using a star-shaped cookie cutter make shapes. Done!
You can store them in the fridge or freezer for later use.

Every Star-Bar contains about 152 kcal.

Good Morning from the breakfast table! A long lazy weekend feast or a quickie before you rush out and seize the day. Breakfast really sets you up for the day. I have to admit I’m not a big breakfast eater unless I’m in a hotel or later in the day,  so it has to taste good and it has to be nutritious.
With kids in school I’m obsessed with giving them a healthy start as I have no idea what they will be eating during the day.
Below are a few of my favorite breakfast recipes. They work equally well for a long lazy weekend feast as a quick breakfast on the go (with some prep).

Mushroom Toast with Sage and Cashew Cream

Do you love the whole egg benedict thing as a weekend hungover cure but want a veggie/vegan alternative? Then I can really recommend this recipe. Mushrooms on toasted bread with a fabulous cashew cream with sage.
Yum yum yum!


Mushroom with Sage and Cashew Cream
Ingredients:

– 250g mushroom

– bread

–  fresh sage

– garlic 1 clove

– squeeze of lemon juice

– 1 tablespoon of coconut oil

– salt and pepper

Cashew Cream
-1 cup of cashew pieces soaked  for a few hours

– 1/2 cup water

– 1 tablespoon of vinegar

– 1 tablespoon of nutritional yeast

– 1 teaspoon of miso paste

– 1/2 teaspoon of salt

Direction:
Fry the sliced mushroom in coconut oil, add the garlic, salt pepper, sage, salt, pepper and lemon juice. Toast the bread. Blend all the ingredients for the cashew cream in a high speed blender.
Assemble: the mushroom on the toast, add a large dollop of cream on top of the mushroom and sprinkle some chopped sage on top.

The Best Granola!

I’m so pleased with this granola recipe as the kids LOVES IT!  My boys are picky eaters and especially about what they have for breakfast. It gives me enormous peace of mind to send them out to the world on a healthy stomach!
I have to say I love it too but I let them have it as I can’t make it fast enough… There is soaking and dehydrating involved which makes the nutrients more available and a real power-house breakfast!
This Granola is both GLUTEN -FREE & NUT-FREE.
Sprouted Granola
Ingredients:

– 500 gram buckwheat

-1/2  cup sunflower seeds

-1/2 cup flaxseeds (I normally get pre-sprouted then you can add this at the end otherwise soak them together with buckwheat and seeds)

– 1/4 cup pumpkin seeds

– 1 cup dried fruits (I normally go for mango, apricots and blueberries)

– 4 tablespoons maple syrup

– 1 and 1/4 teaspoon cinnamon

– 1 teaspoon of vanilla or 1 pod (if hard to get hold skip the vanilla)

– 1/4 teaspoon of sea salt

– 1/4 teaspoon of turmeric

-Freeze dried red berries

Directions:
Soak buckwheat, and seeds overnight.
Rinse and drain put aside and cover with a clean tea towel for a couple of hours.
Mix the flavourings together and mix together with the sprouted buckwheat and seeds.
Spread out on 2 owen trays and let it dry in the owen 50C with the door slightly open for 8 to 10 hours until dried out.
Cut up the dried fruit into small pieces add to the dehydrated granola.
Add som frieze dried berries for extra flavour.

Green Coconut Smoothie

This is my to go smoothie when I’m really short of time and I have some fresh home-made coconut milk in the fridge.
A handful of spinach and the rest is a raid of the cupboard.

Ingredients:

-1 cup coconut milk

– a handful of fresh spinach

-1 tablespoon sesame seeds

-1/2 tablespoon flax seeds

-1/2 teaspoon spirulina

-1 teaspoon bee pollen

-1/4 teaspoon vanilla

Hi there!
The party season has totally kicked in and I feel I’m out drinking and celebrating most nights!
I have far more Christmas partys and drinks to go to now that I have two kids in school then when I was young free and single, but I’m not complaining it’s all great fun!
During the festive period I really make sure my breakfasts are super healthy and filling to counter out what happens later in the day… and this is one of my absolute favorite breakfasts.

Ingredients:

– 2 oranges peel and juice

– 1 cup cashew nuts soaked

– 1/2 cup water or as much as is needed

– 3 tablespoons chia seeds

– 2 teaspoons coconut nectar

– 1/2 teaspoon of vanilla

Raw Vegan Raspberry and Vanilla Yoghurt

Hope you are all having a wonderful week!
This raw vegan yoghurt recipe is totally yum!
It needs a bit of preparation as you have to soak your nuts and then the mixture needs to ferment overnight, but I promise you it’s all worth it!
Now I’m off to help Santa with his purchases in The Chelsea FC Megastore.
I love it that my 8 year old still believes in Father Christmas and his little helpers and I’m more than happy to get him all that he wants, like the soft bearded Diego Costa (a player in Chelsea) so not yum… but I like that it’s not all tech on his list.

Raw Sunshine Porridge

We need some sunshine now the day starts before the Sun is up!
It’s pitch black when I get up to make a very noisy but healthy smoothie for the kids before school.
They also want gluten free flakes for breakfast, but now and then I make this raw, sweet, delicious and very filling porridge!
It comes with life affirming, yellow sunshine granules in the form of bee pollen!
