Warm Uncooked Avocado Soup

Hi everyone!
This weeks recipe is a really nourishing soup and we’re not cooking any of the ingredients but the soup is going to be served warm!
I’m keeping everything fresh and raw, all the enzymes, vitamins and minerals will be just as nature intended and I’m mixing the vegetables with hot water, making the soup warm and toasty!
.
This soup serves one person and I’m using half an avocado, fennel and celery (so good for detoxing bodies). I’m adding chilies to speed up the metabolism, ginger – really good anti inflammatory and loads of greens like rocket and parsley, 1/2 a freshly squeezed lime adds zing and vitamin C.

You need a blender for this soup.  I’m using the Nutribullet, the small container works well for this soup for one.

Warm Uncooked Avocado soup
Ingredients:

-1/2 avocado

– 150g cucumber

– 1 celery stick

– 70g fennel

– 1 tablespoon flat parsley fresh

– handful of rocket

– piece of ginger

– 1 tablespoon olive oil

– juice from 1/2 lime

– salt & pepper

– chilli flakes to taste

– 1/2 cup of hot water

Directions:
Add everything to a blender. Blend until smooth. Serve straight away.

Raw Marinara Spaghetti

Hi everyone!
Don’t Italiens make the best tasting food ever?
This is my raw vegan Marinara recipe so delicious and comforting, perfect as a family meal!
I know some kids put their noses up when they see the spiralizer being used but then you can just make them the sauce which is full of vitality.
And since it’s raw it will take you no time to whip up, especially if you are quick with a knife!

Raw  Spaghetti Marinara
Ingredients
Serves 2-4

– 1 1/2 cup chopped and deseeded tomatoes

– 1/2 cup sundried tomatoes

– 2 tablespoons fresh basil

– (2 tablespoons olive oil if you don’t use the sundried tomatoes that comes in oil)

– 2 garlic cloves

– 2 teaspoons dried oregano

– 1 teaspoon vinegar

– 2 large zucchini for your spaghetti

Salted Caramel Seed Balls

Only 3 more sleeps to the big day!
My kids are beyond excited and I’m really looking  forward to have the whole family together!
I’m celebrating at my parents house in Stockholm and we will have a classic Swedish Christmas with Santa visiting in the evening and a smörgårdsbord full of traditional goodies.
These gorgeous seed balls are super easy to whip together for the big day or any day for that matter – they are seriously yummy!

Salted Caramel Seed Balls

Ingredients

–  1 cup cashew nuts

– 12 majool dates

– 3 tablespoons tahini

–  1 1/2 tablespoons raw cacao

– 1 tablespoon coconut nectar

– 2 teaspoons cardamom

–  1/2 teaspoons vanilla extract

– 4 pinches of salt

– sesame seeds

Raw Vegan Raspberry and Vanilla Yoghurt

Hope you are all having a wonderful week!
This raw vegan yoghurt recipe is totally yum!
It needs a bit of preparation as you have to soak your nuts and then the mixture needs to ferment overnight, but I promise you it’s all worth it!
Now I’m off to help Santa with his purchases in The Chelsea FC Megastore.
I love it that my 8 year old still believes in Father Christmas and his little helpers and I’m more than happy to get him all that he wants, like the soft bearded Diego Costa (a player in Chelsea) so not yum… but I like that it’s not all tech on his list.

Raw Vegan Probiotic Raspberry and Vanilla Yoghurt

– 1 cup fresh raspberries

Creamy Dressing – Raw and vegan

This creamy tasty dressing is my new favorite!
It’s absolutely gorgeous!
Not just great as a salad dressing, It’s also fab as a dipping sauce.
Soak your nuts.
Put all the ingredients in your blender and it’s done.
Easy-peasy, with a bit of lemon squesy.

Creamy Dressing – Raw and Vegan
Ingredients:

– 1 cup soaked cashew nuts

– 1/2 cup water

– 1/2 cup olive oil

– 4 tablespoons fresh lemon juice

– 3 tablespoons raw apple cider vinegar

– 1 tablespoon tamari

– 2 dates

– 1 tablespoon sea spaghetti

– 1 small shallot

– 1 garlic clove

– 1 teaspoon yellow mustard powder

– 1/2 teaspoon Himalayan crystal salt

Raw Choco Smoothie Bowl

As I did the school run this morning some beautiful red and orange leaves dropped down on my head reminding me that even though it’s warm and a long time until I have to get out the cashmere, autumn is here.
I have to say I love it!
Autumn in London is gentle and gorgeous, and soon it’s Halloween which is so much fun in my neighbourhood!
This weeks recipe is a chocolate smoothie bowl full of goodness and beautifying avocado and acai powder.
Great as a filling breakfast or healthy pudding.
It’s also perfect for hiding avocado from picky eaters!
