Fermented Cabbage, Cauliflower and Dill

– 1 cabbage head

– 1/2 cauliflower head

– bunch of dill

– Himalayan crystal salt  (15gram of salt per kilo vegetables)

You  also need:

– Scale

– knife

– chopping board

– mixing bowl

-kilner jar

I never get bored of this super healthy NUT FREE Vegan almost Raw (bar the quinoa) TACO BOWL.
If I was told I could only have this meal for the rest of my life I would not be sad at all!!
It’s  full of taste, It’s clean and super easy do make, a requisite for me, as you might have noticed 🙂

Serves 2
Ingredients:

– 1 cup sunflower seeds

– 1/2 cup sundried tomatoes

– 1 1/2 tablespoon olive oil

– 1/4 teaspoon chiliflakes

– 1/2 teaspoon cumin

– 1/4 teaspoon salt or less

serve with:

– Quinoa

– Romanie lettuce

– parsley on top

Raw Marinara Spaghetti

Hi everyone!
Don’t Italiens make the best tasting food ever?
This is my raw vegan Marinara recipe so delicious and comforting, perfect as a family meal!
I know some kids put their noses up when they see the spiralizer being used but then you can just make them the sauce which is full of vitality.
And since it’s raw it will take you no time to whip up, especially if you are quick with a knife!

Raw  Spaghetti Marinara
Ingredients
Serves 2-4

– 1 1/2 cup chopped and deseeded tomatoes

– 1/2 cup sundried tomatoes

– 2 tablespoons fresh basil

– (2 tablespoons olive oil if you don’t use the sundried tomatoes that comes in oil)

– 2 garlic cloves

– 2 teaspoons dried oregano

– 1 teaspoon vinegar

– 2 large zucchini for your spaghetti

Vegetable Soup for Fussy Eaters

Getting kids to eat a health-inducing warming soup is not always easy!
Especially if you got several kids who like really different types of foods and are fussy in different ways.
Add some food allergies into the mix and it’s easy to throw in the towel.
In this video I show you what I did to get my kids used to and later liking this healthy vegan vegetable soup.

Warming Vegetable Soup
Ingredients
Serves 4

– 1 litre water

– 2 tablespoon gluten free vegetable stock powder

– 1 large or 3 small red onions

– 1 sweet potato

– 3 carrots

– 2 tomatoes

– 2 handfuls of kale

– 1-2 garlic cloves

– piece of ginger

– fresh herbs thyme and or rosemary

– 1/2 teaspoon turmeric

– 1/4 teaspoon cinnamon

– black pepper

– olive oil

– fresh coriander for decoration

How to make Raw Eggnog

I love eggnog, so delicious, scrumptious and Christmassy!
This version is also incredible healthy any without milk, egg or sugar.
And you can easily make it into a super-food-cocktail by adding some Bourbon!

Raw Eggnog
Serves 2
Ingredients:

– 1/2 cup cashew nuts soaked

– 8 dates about 1/4 cup dates

– 1 tablespoon raw coconut oil

– 1 and 1/4 cup water

– 1/2 frozen banana

– 1/2 teaspoon vanilla extract

– 1 teaspoon cinnamon

– 1/2 teaspoon nutmeg

and extra nutmeg and cinnamon sticks for decorating

When I was little my grandmother always took us kids mushroom picking in the dark mysterious Swedish woods.
She could name every mushroom we came across and she knew exactly where they were hiding,
I wish I had paid more attention.
Here in London I do my mushroom picking at err.. Whole Foods, where they have an amazing selection at the moment.
For this recipe I think chestnut buttons work best.
And remember to let your mushrooms sun bathe to boost that all important Vitamin D!

Vitamin D Boosted Marinated Mushrooms
Serves 4

Ingredients:

– 150g chestnut buttons

– 1/2 cup olive oil

– 3 tablespoons apple cider vinegar

– 1 tablespoon tamari

– 1/2-1 cup chopped flat parsley

– 1 garlic clove

– 2 spring onions

– peel from 1 lemon

1/2 cup of dried puy lentils
1 bag rocket salad
2 spring onions
Dressing:
2 tablespoons olive oil
1 tablespoon tamari
1 tablespoon balsamic vinegar
1/2 tablespoon coconut sugar
1/4 teaspoon chilli
1/4 teaspoon turmeric
black pepper

The avocado provides gorgeous fats for your skin.
The cucumber will help your hair and the chili speeds up your metabolism.

serves 2 or 1 really hungry person or 4 small starters.

Ingredients:

– 1 large cucumber

– 1/2 avocado

– 2 spring onion

– 1 chili

– juice from 1 lime

– 1- 11/2 cup coconut water or milk

– fresh coriander

– 1/4 tsp cumin

– 1/4 oregano

– 2 tomatoes for decoration
