Fermented Friday – CUCUMBER KIMCHI

Happy Friyay! This is one of my favorite fermented recipes! Fresh and spicy like hell. Not for the faint hearted. It takes 2-3 days to ferment and you start by mixing salt and cucumber for 10-12 hours.
You need the following and a bit of patience:

CUCUMBER KIMCHI

1 kilner jar
Ingredients:
– 2 cucumbers
– 2 tablespoons sea salt
– 100 gram spring union
– 15g grated ginger
– 4 grated garlic cloves
– 1 tablespoon of chili flakes
– 2 tablespoons toasted sesame seed oil
– peel from 1 lime

Video: Cucumber and Avocado Soup

This super nutritious cold soup is filling and light at the same time, if that makes sense.
It’s also a beauty soup!
The avocado provides gorgeous fats for your skin.
The cucumber will help your hair and the chili speeds up your metabolism.

serves 2 or 1 really hungry person or 4 small starters.

Ingredients:

– 1 large cucumber

– 1/2 avocado

– 2 spring onion

– 1 chili

– juice from 1 lime

– 1- 11/2 cup coconut water or milk

– fresh coriander

– 1/4 tsp cumin

– 1/4 oregano

– 2 tomatoes for decoration

Cucumber and Onion Salad

Cucumber salad

I made this quick cucumber side dish the other day. I found the recipe on Pinterest and modified it slightly.

Cucumbers are full of anti-inflammatory Vitamin K but make sure they are organic!!!

Cucumber is on The Dirty Dozen List,(I wrote aboutit  HERE) meaning they have fairly high levels of pesticides and insecticides, which are toxic to the nervous system.

This salad also contains the Scandi-Classic herb dill.

Almost all traditional dishes in Sweden are served with or cooked in dill, which is not a bad thing, dill is super good if you suffer from gas and bad breath and it’s excellent for breastfeeding Mum’s as it increase milk production.

Recipe:

1 Cucumber, thinly sliced.( I used a cheese slicer).

1 Red onion, also thinly sliced.

1/2 cup of chopped dill.

1 tablespoon of lemon juice

1 Tablespoon of Apple Cider vinegar

1 1/2 – 2 tablespoons of  Virgin Olive Oil

Himalayan Crystal salt and Black pepper
