Warm Uncooked Avocado Soup

Hi everyone!
This weeks recipe is a really nourishing soup and we’re not cooking any of the ingredients but the soup is going to be served warm!
I’m keeping everything fresh and raw, all the enzymes, vitamins and minerals will be just as nature intended and I’m mixing the vegetables with hot water, making the soup warm and toasty!

This soup serves one person and I’m using half an avocado, fennel and celery (so good for detoxing bodies). I’m adding chilies to speed up the metabolism, ginger – really good anti inflammatory and loads of greens like rocket and parsley, 1/2 a freshly squeezed lime adds zing and vitamin C.

You need a blender for this soup.  I’m using the Nutribullet, the small container works well for this soup for one.

Warm Uncooked Avocado soup
Ingredients:

-1/2 avocado

– 150g cucumber

– 1 celery stick

– 70g fennel

– 1 tablespoon flat parsley fresh

– handful of rocket

– piece of ginger

– 1 tablespoon olive oil

– juice from 1/2 lime

– salt & pepper

– chilli flakes to taste

– 1/2 cup of hot water

Directions:
Add everything to a blender. Blend until smooth. Serve straight away.

Clean Green Lean Smoothie

I could easily live on just this Clean Green Smoothie, It’s so fresh and smooth and packed full of goodness!
Because of the avocado It’s also very filling, so the perfect meal replacement if you don’t feel like eating to much.
And as with all my recipes it’s beyond quick to make, all you need is a half decent blender.

Clean Green Lean Smoothie
Serves 1
Ingredients:

– 1/2 avocado

– 1 cup coconut water

– piece of cucumber

– greens

– mint handful

– parsley handful

– 1/2 tablespoon lemon juice

– vanilla extract

– 5 ice cubes

Watermelon and Mint Salad

Incredible easy to make and it goes with whatever you decide to throw on the barbie the weekend.

Watermelon and Mint Salad
Ingredients:

– 3 cups watermelon

– 1 avocado

– 1/2 red onion

– small bunch of mint leaves

– 4 tablespoons balsamic vinegar

– salt and pepper

Lime and Rose Dessert Raw and Vegan

This Lime and Rose dessert is so good!
I love love love to use rose in puddings, well in actually  everything I can get away with.
This is also the perfect way to hide avocados for the kids as they think (well the little one does) that the green colour comes from the limes.

Lime and Rose Dessert:
RAW and VEGAN

Ingredients:

– 3 avocados

– 6 majool dates

– 2 lime zest and juice

– 1 tablespoon rose water

– 1/2 teaspoon vanilla extract

– pinch of Himalayan crystal salt

– berries for decoration: strawberries, raspberries, pomegranate, blueberries

Raw Choco Smoothie Bowl

As I did the school run this morning some beautiful red and orange leaves dropped down on my head reminding me that even though it’s warm and a long time until I have to get out the cashmere, autumn is here.
I have to say I love it!
Autumn in London is gentle and gorgeous, and soon it’s Halloween which is so much fun in my neighbourhood!
This weeks recipe is a chocolate smoothie bowl full of goodness and beautifying avocado and acai powder.
Great as a filling breakfast or healthy pudding.
It’s also perfect for hiding avocado from picky eaters!

Raw Choco Smoothie Bowl

Ingredients:

– 1 avocado

– 1 cup homemade coconut milk

– 1 frozen banana

– 4 teaspoons raw powdered cacao

– 3 teaspoons acai powder

– 5 ice cubes

– topping: cacao nibs, raspberries, dessicated coconut

This super nutritious cold soup is filling and light at the same time, if that makes sense.
It’s also a beauty soup!
The avocado provides gorgeous fats for your skin.
The cucumber will help your hair and the chili speeds up your metabolism.

serves 2 or 1 really hungry person or 4 small starters.

Ingredients:

– 1 large cucumber

– 1/2 avocado

– 2 spring onion

– 1 chili

– juice from 1 lime

– 1- 11/2 cup coconut water or milk

– fresh coriander

– 1/4 tsp cumin

– 1/4 oregano

– 2 tomatoes for decoration
