Frozen Yoghurt Triangles is an easy dessert to pull out of the hat.
I always have yoghurt in the fridge and my freezer is full of frozen berries so this is something I serve quite often. It’s an easy and refreshing end to a meal.
Frozen Yoghurt Triangles
– 450 gram coconut yoghurt
– 1 cup of mixed frozen berries
– 1/3 cup honey
– vanilla pod
Mix the ingredients in a mixing bowl.
Pour into a round springform cake tin.
Freeze for an hour and a half. Slice and serve straight away.
It’s so important to teach kids to cook. It doesn’t have to be complicated. Making a super healthy chocolate ice-cream is a great start. Most work is done by the blender but they still feel super good about themselves having made an insanely delicious and nutritious ice cream!
I had my older one baking bread the other week. He ate with gusto. I’m pretty sure he would have turned his nose up if I had made it 🙂
For this vegan super easy chocolate ice cream, without added sugar, you need the following ingredients:
Chocolate and Banana Ice Cream
– 3 chopped up frozen bananas
– 3 tablespoons cacao
– 3/4 cup rice milk or almond milk
– vanilla pod or vanilla extract
– pinch of sea salt
Put everything in a blender. You might have to add a tiny bit more liquid. Serve straight away.

I’m cooking with my 10 year old again and this time it’s a dessert.
This Mango Froyo is so refreshing and delicious. perfect as a pudding on a hot summers day! You need 3 ingredients and it takes 30 seconds. That’s the sort of dessert I can deal with now school is out for the summer 🙂
– 250 gram frozen mango
– 1 cup coconut yoghurt
– 1 tablespoon honey
Directions: Put everything in a high speed blender. Serve.
These Lemon and Apricot Energy Bars are nut free, so perfect to put in your kids lunchbox.
– 2 cups apricots
– 1 1/2 cup desiccated coconut
– 1 cup pumpkin seeds
-1/2 cup shelled hemp seeds
– 1 fermented lemon (about 1/2 cup) or zest from 1-2 fresh lemons
Blend everything in a food processor. Put baking paper in a square oven dish. Let it set in the fridge for about 2 hours. Cut up into squares and sprinkle with desiccated coconut.

This is something we made when we got home from school and our parents had not yet arrived.
They are delicious, very quick to make as there’s NO cooking involved and you normally have the ingredients at home already.
I have healthy-fyed this recipe a bit, but they are still easy to make and super delicious!
Swedish Chocolate Balls
Makes 22 balls
– 100 Gram Fat of Choice: almond or coconut or dairy butter
– 1 1/4 Cup Porridge Oats
– 1/2 Cup Coconut Sugar
– 1/4 Cup Shelled Hemp Seeds (you can replace this with more oats)
– 2 Tablespoons Cacao
– 2 Tablespoons of Cold Coffee
– 1 teaspoon Vanilla
– Pinch of Salt
– 1/2 Cup Desiccated Coconut (to roll the chocolate balls in)
I’m not going to lie. This is not a super healthy treat. But it’s so much better for you then the bog standard shop-bought salted caramel sauce.We love it on pancakes as a special treat. Is gorgeous on cake, ice cream or just straight from the jar. Coconut sugar is still sugar so if you are on a strict no sugar diet this is not for you. But if you want something sweet, coconut sugar is a better choice than ordinary white sugar. It contains minerals like iron zinc potassium and some calcium which may offer some health benefit.

Vegan Salted Caramel Sauce
– 1 Tin of full fat coconut milk 400ml
– coconut sugar 1/2 Cup
– 1/2 teaspoon vanilla powder
– 1/4 teaspoon sea salt
This Lime and Rose dessert is so good!
I love love love to use rose in puddings, well in actually everything I can get away with.
This is also the perfect way to hide avocados for the kids as they think (well the little one does) that the green colour comes from the limes.
Lime and Rose Dessert:
RAW and VEGAN
– 3 avocados
– 6 majool dates
– 2 lime zest and juice
– 1 tablespoon rose water
– 1/2 teaspoon vanilla extract
– pinch of Himalayan crystal salt
– berries for decoration: strawberries, raspberries, pomegranate, blueberries

My kids are beyond excited and I’m really looking forward to have the whole family together!
I’m celebrating at my parents house in Stockholm and we will have a classic Swedish Christmas with Santa visiting in the evening and a smörgårdsbord full of traditional goodies.

– 12 majool dates
– 3 tablespoons tahini
– 1 1/2 tablespoons raw cacao
– 1 tablespoon coconut nectar
