Dragonfruit Smoothie

I’m all for  buying locally produced fruit and vegetables, but sometimes it’s fun to push the boat out to a far away country and pick up a weird and gorgeous  looking fruit like a dragonfruit.
This very one was eye wateringly expensive at Selfridges Food Hall, so if you like me live in a not so exotic city, you might want to save it for a special occasion.
Today I’m doing a super yummy smoothie using the meat of the dragon fruit and home-made coconut milk and I also add a few highly nutritious extras like kale, bee pollen and chia seeds.

Dragon Fruit Smoothie
Ingredients:

– 1 dragon fruit

– 1 cup coconut milk

– 1 frozen banana

– 1/2 tablespoon chia seeds

– 1/2 teaspoon bee pollen

– handful of kale

– ice cubes if needed
