There was a slight hint of autumn chill early this morning when I took the kids to school. I don’t mind at all, I’m looking forward to purchase some knitted tops, try my new dark nail polish and to cook loads of nice soups and stews.
My actress friend Marie Brock, has the most delicious soup recipe that she kindly shared with me.
Her Spicy Lentil and Smoked Bacon Soup is beyond yummy, I’m making it tonight.
Marie has loads of interesting projects in the pipeline, and we are all super excited about the world première of the Spanish film Starting from Zero the 5th of October.

I guess this soup is perfect after a day spent running around with a strap-on belly with explosions going on left right and center, It’s very warming and calming at the same time.
Spicy Lentil and smoked Bacon Soup
INGREDIENTS: ( serves 4 people )
250g Pue Lentils
500-600 g vegetable or chicken stock
5 smokes Bacon rashers (I get mine nitrite-free from Whole Foods)
3 Celery stems
1 medium Onion
1 Bakes Potato
2 cloves of Garlic
2 green Chillies ( de-seeded for less spicy )
Fresh thyme ( or 1-2 spoon full dried )
2 tbl.spoon Olive oil
1 bunch of parsley normal or flat leaf
Cook the lentil till almost done approx 30 min.
Meanwhile you can prepare all your veggies: Cut the carrots, celery and potato in to small cubes approx ½ cm. Finely chop the onion and garlic and chillies.
Sauté the onion in the olive oil with Thyme, pinch of salt and pepper for 1-2 min then add the chillies and then the garlic.
Add the carrots, potatoes and celery. And last the cut the fat from the bacon and add. Cook for 5-7 min.
Add the lentils (and the water they were cooked in) and the stock.
Simmer for 20 min or till potatoes are done and then add half the parsley roughly chopped.
Add the rest of the parsley right before serving
Enjoy with some fresh rustic wholemeal-seeded bread.
