
I have just about de-frosted after yesterdays Diamond Jubilee Celebrations.
It was such a great day though, the britishness of it all was just amazing.
Nobody was letting such a trivial thing as a shockingly bad weather dampen the spirit of the day.
The weather gods were given the finger and the spirit of the bulldog were everywhere to be seen.
Even I had a stiff upper lip, this had perhaps more to do with hypothermia than keeping calm and carrying on.
We went to a lovely street party down the road and I made a classic Swedish strawberry cake. I guess I need to hold on to that little part of me that’s still nordic.
So this is the second cake I’ve made in less than a week, I’m turning into my Mum!

I found the recipe HERE, But I have changed it slightly; I used more strawberries and one layer of strawberry jam in between (no liqueur, I hate liquer in cakes, much rather drink it) and I used a bit more whipping cream, 21/2 cup instead of 2.

I love to make a similar strawberry cake – I just use fresh strawberries mashed up with sugar inside. Too bad I’m not eating sugar any more
